  • ½ cup Almond Flour Finely ground
  • ½ cup Parmesan Cheese Freshly grated
  • 1 teaspoon Italian Seasoning Or your favorite spice mix
  • ½ teaspoon Sea Salt Adjust to taste
  • ¼ teaspoon Black Pepper
  • 2 large Eggs Well beaten
For Cooking
  • ¼ cup Avocado Oil Can substitute with olive oil

Preparation Steps
  1. Begin by trimming the ends of your fresh zucchini, then cut it in half crosswise. Slice each half lengthwise into fry-shaped pieces.
  2. In a shallow dish, combine almond flour, Parmesan cheese, sea salt, black pepper, and Italian seasoning until well blended.
  3. In a separate shallow dish, beat the eggs until smooth. Dip each zucchini fry into the egg and then roll it in the almond-parmesan mixture.
  4. Preheat your air fryer to 350°F (175°C). Lightly spray the seasoned zucchini fries with avocado oil, and arrange them in a single layer.
  5. If baking, preheat the oven to 400°F (200°C). Spread the coated zucchini fries on a lined baking sheet, spray with oil, and bake.
  6. For frying, heat avocado oil in a skillet over medium heat. Fry the zucchini fries until golden brown on each side.
