For the Salad

  • 2 cups Macaroni Pasta Any small cut pasta can be substituted.
  • 1 medium Chopped Red Onion Green onions can replace for a milder taste.
  • 1 cup Finely Chopped Celery Bell peppers can be used as a substitute.
  • 1/2 cup Chopped Green Onion Enhances freshness and adds color.
  • 6 slices Cooked Chopped Bacon Turkey bacon or pancetta can be alternatives.
For the Dressing
  • 1 cup Mayonnaise Greek yogurt can be a healthier substitute.
  • 2 tablespoons White Wine Vinegar Apple cider vinegar can be used if preferred.
  • 1 tablespoon Dijon Mustard Yellow mustard can be an alternative.
  • 2 cloves Grated Garlic Garlic powder can work as a substitute.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.
For the Garnish
  • 1 teaspoon Paprika Smoked paprika can add more depth.

Method
 

Instructions
  1. Cook the pasta in salted boiling water until al dente, approximately 7-10 minutes. Drain and rinse with cold water, then set aside.
  2. Slice the hard-boiled eggs in half. Scoop the yolks into a bowl and chop the whites. Mash the yolks until crumbly.
  3. In a bowl, combine macaroni with celery, red onion, green onion, and bacon. Fold in the egg whites and yolks.
  4. In a small bowl, whisk together mayonnaise, mustard, vinegar, garlic, salt, and pepper until smooth.
  5. Pour the dressing over the pasta mixture and mix thoroughly. Adjust seasoning with salt and pepper.
  6. Transfer to a serving dish, garnish with green onions and paprika, then chill for at least 1 hour before serving.
