Ingredients

For the Chowder Base
  • 6 strips Bacon Adds savory richness and crunch; substitute with turkey bacon for a lighter option.
  • 1 cup Onion Provides aromatic flavor and sweetness; can replace with shallots for a milder taste.
  • 1 cup Celery Adds a fresh, crisp texture; use bell peppers if unavailable.
  • 1 cup Carrots Contributes natural sweetness and color; can substitute with parsnips for an earthy flavor.
  • 2 cloves Garlic Enhances the overall flavor profile; fresh minced garlic is recommended.
  • 0.5 cup Flour Thickens the chowder for a creamy texture; cornstarch can be swapped for a gluten-free option.
  • 4 cups Chicken Broth Forms the soup base, providing depth of flavor; vegetable broth serves as a vegetarian alternative.
  • 1 cup Heavy/Whipping Cream Adds richness and body; whole milk or a non-dairy cream can be used as a lighter substitute.
For the Main Ingredients
  • 2 cups Corn The star ingredient that brings sweetness; use fresh corn in season or frozen corn for convenience.
  • 2 cups Russet Potatoes Adds heartiness and substance; Yukon gold potatoes can also be used for a creamier texture.
  • 2 teaspoons Italian Seasoning Offers herbal notes; substitute with dried thyme or oregano for a personalized touch.
  • 0.25 teaspoon Cayenne Pepper Provides a hint of heat; leave it out for a milder chowder.
  • Salt & Pepper Essential for flavor; adjust to taste.

Equipment

  • large pot

Method

Step-by-Step Instructions
  1. Begin by cutting the bacon into strips and heating a large pot over medium-high heat. Cook the bacon until crispy and golden brown, which should take about 10 minutes. Once cooked, remove the bacon from the pot and set it aside, ensuring to leave the bacon fat in the pot to flavor the chowder.
  2. With the remaining bacon fat still in the pot, add diced onion, chopped celery, and sliced carrots. Sauté the vegetables over medium heat until they soften, which will take about 5 minutes. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  3. Sprinkle flour over the sautéed vegetables, stirring continuously to combine, and cook for about one minute.
  4. Slowly pour in the chicken broth while mixing well to dissolve the flour and prevent clumps. Bring the mixture to a gentle boil.
  5. Stir in heavy cream, fresh or frozen corn, diced russet potatoes, Italian seasoning, and most of the reserved bacon.
  6. Bring the chowder to a boil once more, then reduce the heat to low and allow it to simmer with the lid slightly ajar for about 15-20 minutes until the potatoes are tender.
  7. Once the potatoes are cooked through, taste the chowder and adjust the seasoning with salt and pepper as needed. Garnish with the reserved crispy bacon before serving.
