  • 1 can chickpeas drained and rinsed
  • 1 cup diced English cucumbers regular cucumbers can be substituted, peel if waxed
  • 1/4 cup finely chopped red onion substitute with green onions or omit for a milder taste
  • 2 tablespoons fresh dill or any herbs based on your preference
  • 2 tablespoons fresh parsley or any herbs based on your preference
  • 1/2 cup crumbled feta cheese omit for a dairy-free version or use vegan feta (optional)

Method
 

Instructions
  1. In a small bowl, whisk together plain Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and seasonings until smooth.

  3. Pour the dressing over the salad base and mix until all ingredients are well-coated.
