- Preheat your oven to 325°F (160°C). Grease a 9x13-inch baking pan or line it with parchment paper.
- In a bowl, combine crushed graham crackers with melted butter. Press into the bottom of the prepared pan and bake for about 10 minutes.
- Blend cream cheese in a large bowl until smooth. Gradually add sugar and mix until combined.
- Incorporate sour cream, then add eggs one at a time, mixing on low speed until just blended.
- Pour the cheesecake filling over the crust and bake for 30–35 minutes until the center has a slight jiggle.
- Cool in the pan for an hour, then refrigerate for at least 4 hours or overnight.
- Remove from the refrigerator, lift out of the pan using parchment paper, and slice with a sharp knife.
