Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine Greek yogurt, maple syrup (or honey), vanilla extract, and a splash of almond milk. Whisk together until the mixture is smooth and creamy, taking about 2–3 minutes.
  2. Select your serving dish—trifle bowl, mason jars, or a baking dish will work perfectly for displaying the layers.
  3. Start by spooning a generous layer of the yogurt mixture into the bottom of your prepared serving vessel.
  4. Slice the ripe bananas into thin rounds and layer them over the yogurt mixture.
  5. Sprinkle a layer of whole grain cookies over the bananas.
  6. Continue layering by adding another spoonful of the yogurt mixture on top of the cookies, followed by another layer of sliced bananas and cookies.
  7. For a gorgeous finishing touch, add a few more banana slices and a sprinkle of crushed cookies on top of your final yogurt layer.
  8. Cover your completed pudding with plastic wrap or a lid, and refrigerate for at least 2 hours.
