- In a large mixing bowl, combine Greek yogurt, maple syrup (or honey), vanilla extract, and a splash of almond milk. Whisk together until the mixture is smooth and creamy, taking about 2–3 minutes.
- Select your serving dish—trifle bowl, mason jars, or a baking dish will work perfectly for displaying the layers.
- Start by spooning a generous layer of the yogurt mixture into the bottom of your prepared serving vessel.
- Slice the ripe bananas into thin rounds and layer them over the yogurt mixture.
- Sprinkle a layer of whole grain cookies over the bananas.
- Continue layering by adding another spoonful of the yogurt mixture on top of the cookies, followed by another layer of sliced bananas and cookies.
- For a gorgeous finishing touch, add a few more banana slices and a sprinkle of crushed cookies on top of your final yogurt layer.
- Cover your completed pudding with plastic wrap or a lid, and refrigerate for at least 2 hours.
