- In a small bowl, combine mayonnaise with poultry seasoning, salt, and pepper. Mix well and add chopped chives. Set aside.
- Lay out two slices of nutty bread on a cutting board. Spread the herbed mayo on both slices.
- On one slice, layer green leaf lettuce, followed by thick slices of leftover turkey, and a dollop of cranberry sauce.
- Place the second slice of bread on top, mayo side down, and gently press together. Cut the sandwich in half diagonally.
- Serve immediately with a side of chips or a light salad.
