Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry until it’s about 1/8 inch thick and transfer it onto the prepared baking sheet.
  3. Cook diced pancetta in a skillet over medium heat until crispy, about 3-5 minutes.
  4. Spread cranberry sauce evenly over the puff pastry, then sprinkle crispy pancetta and fresh thyme on top.
  5. Slice Brie cheese into quarters and arrange on top of the filling.
  6. Fold and pinch the edges of the puff pastry over the filling, then brush with beaten egg.
  7. Bake for 20-25 minutes or until the pastry is golden brown and puffed.
  8. Allow to cool slightly for 5 minutes and garnish with additional fresh thyme before serving.
