- Finely shred about 4 cups of cabbage and place it into a large mixing bowl. Core and chop 2 fresh apples into bite-sized pieces and toss with lemon juice.
- In a separate bowl, combine ½ cup of mayonnaise with 2 tablespoons of honey and 3 tablespoons of apple cider vinegar. Whisk until smooth.
- Pour the dressing over the shredded cabbage and chopped apples. Toss together until well coated.
- Fold in 1 cup of dried cranberries and sprinkle in ½ cup of chopped walnuts or sunflower seeds and mix gently.
