For the Creamy Finish
  • 1 cup Heavy Cream Or half-and-half for lighter option
  • 2 cups Shredded Cheddar Cheese Freshly grated
  • 1 cup Milk Whole or 2%
  • 2 tbsp Cornstarch Mixed with water for slurry
  • 2 tbsp Fresh Parsley Chopped, for garnish
  • 1 cup Extra Cheddar Cheese Optional topping

Method
 

Step-by-Step Instructions
  1. In a large skillet over medium-high heat, brown the ground beef for 6-8 minutes, drain excess fat, and transfer to the crockpot.
  2. In the same skillet, reduce heat to medium, sauté diced onion and minced garlic for 3-5 minutes until translucent, then transfer to the crockpot.
  3. Add diced potatoes, chopped carrots, celery, dried thyme, parsley, paprika, salt, and pepper to the crockpot, stirring gently.
  4. Pour in chicken or beef broth, cover, and cook on Low for 4-6 hours or High for 2-3 hours.
  5. In the last 10-15 minutes, stir in heavy cream and milk, and gradually mix in shredded cheddar cheese until melted.
  6. Garnish with fresh parsley and extra cheddar cheese, then serve hot.
