  • 1 can Black-Eyed Peas drained and rinsed
  • 1 can Black Beans drained and rinsed
  • 2 whole Roma Tomatoes diced
  • 1 whole Jalapeño Pepper diced, seeds removed for milder heat
  • 1 whole Yellow Bell Pepper diced
  • 1 whole Red Onion diced
  • 1/4 cup Cilantro chopped, optional
For the Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Worcestershire Sauce optional
  • 1 teaspoon Seasoned Salt
  • 1 teaspoon Ground Cumin optional, highly recommended
  • 1/2 teaspoon Ground Black Pepper
To Serve
  • 1 bag Tortilla Chips for dipping

Method
 

Preparation
  1. Chop the vegetables and ensure uniform pieces, about ¼ inch in size.
  2. Combine the black-eyed peas and black beans in a mixing bowl. Fold in chopped vegetables.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Worcestershire sauce, seasoned salt, ground cumin, and black pepper.
  4. Pour the dressing over the bean and vegetable mixture. Gently toss until evenly coated.
  5. Chill the Cowboy Caviar for 30-60 minutes or serve immediately.
  6. Serve the Cowboy Caviar with tortilla chips or vegetable sticks.
