For the Flavoring
  • 1 teaspoon cinnamon Increase for a stronger flavor.
  • 1 tablespoon sweetener (brown sugar, honey, etc.) Maple syrup or sugar alternatives make great variations.
  • 2 tablespoons milk (or plant-based milk) Any type of milk works.

Preparation
  1. In a microwave-safe mug, combine 1/4 cup of cottage cheese, 2 tablespoons of flour, and 1 tablespoon of sweetener. Mix until smooth.
  2. Add one egg or a flaxseed mixture, along with 2 tablespoons of milk and 1/2 teaspoon of baking powder. Add 1 teaspoon of cinnamon. Mix thoroughly.
  3. Place the mug in the microwave and cook on high for 1 minute, checking for doneness.
  4. Carefully remove the mug from the microwave and let it cool for 1-2 minutes.
  5. Optionally, top with cinnamon or icing made from powdered sugar and milk before serving.
