- In a microwave-safe mug, combine 1/4 cup of cottage cheese, 2 tablespoons of flour, and 1 tablespoon of sweetener. Mix until smooth.
- Add one egg or a flaxseed mixture, along with 2 tablespoons of milk and 1/2 teaspoon of baking powder. Add 1 teaspoon of cinnamon. Mix thoroughly.
- Place the mug in the microwave and cook on high for 1 minute, checking for doneness.
- Carefully remove the mug from the microwave and let it cool for 1-2 minutes.
- Optionally, top with cinnamon or icing made from powdered sugar and milk before serving.
