  • 3 large Egg Whites or 2 large eggs
  • 1/4 cup Coconut Flour or almond flour, adjust for absorbency
  • 1/4 cup Granulated Sweetener Erythritol, Stevia, or Sugar
  • 1 tbsp Baking Powder
  • 1 tbsp Cinnamon essential for flavor
  • 1 tsp Vanilla Extract or almond extract
  • 1/2 tsp Salt
  • 1/4 cup Melted Coconut Oil or melted butter
For Optional Frosting
  • 4 oz Cream Cheese or Greek yogurt for lighter option
  • 1/4 cup Powdered Sweetener for frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with cupcake liners.
  2. In a large mixing bowl, combine rolled oats, vanilla protein powder, unsweetened applesauce, milk, and egg whites. Whisk until smooth, about 1-2 minutes.
  3. Stir in coconut flour, granulated sweetener, baking powder, cinnamon, vanilla extract, and salt until a batter forms. Avoid overmixing.
  4. Spoon half of the muffin batter into the prepared muffin cups. Sprinkle a mixture of cinnamon and sweetener over this layer.
  5. Top with remaining batter, filling cups to about 3/4 full. Bake for 15-20 minutes, checking doneness with a toothpick.
  6. For optional frosting, beat cream cheese, powdered sweetener, milk, and vanilla until smooth.
  7. Once cooled, spread frosting over muffins if desired and enjoy!
