- Preheat your oven to 350°F (175°C) and prepare your granola bar molds on a baking sheet.
- Mash ripe bananas in a mixing bowl until smooth and creamy.
- Combine melted coconut oil, eggs, vanilla extract, almond milk, and maple syrup with the mashed bananas.
- Sift in flour, cinnamon, baking powder, baking soda, and salt, then gently fold until just combined.
- Fold in the chocolate chips evenly without overworking the batter.
- Using a 1/4 cup scoop, fill the prepared molds about three-quarters full.
- Bake for 25-30 minutes until a toothpick comes out clean.
- Cool in molds for 10 minutes before transferring to a wire rack to cool completely.
