  • 1/4 cup tahini or sunflower seed butter for nut-free
  • 2 tablespoons tamari gluten-free soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon sesame oil
  • 1 clove garlic minced
Salad
  • 4 cups napa cabbage chopped
  • 2 cups rotisserie chicken shredded
  • 1 cup shredded carrots
  • 1/4 cup green onions finely chopped
  • 1/2 cup roasted cashews or almonds/sunflower seeds
  • 1/4 cup fresh cilantro chopped, or parsley
  • 2 tablespoons toasted sesame seeds optional

Method
 

Preparation
  1. In a medium jar, combine tahini, tamari, rice vinegar, maple syrup, sesame oil, and minced garlic. Mix until smooth and creamy, about 1-2 minutes.
  2. Chop the napa cabbage into bite-sized pieces and place it in a large mixing bowl along with shredded carrots.
  3. Shred the rotisserie chicken into bite-sized pieces and add it to the bowl with cabbage and carrots.
  4. Finely chop the green onions and cilantro, then add them to the mixing bowl along with the roasted cashews.
  5. Pour the dressing over the salad mixture and toss until well coated.
  6. Serve immediately or refrigerate for up to two days.
