Cooking Steps
- In a medium saucepan, combine fresh cherries, granulated sugar, lemon juice, and Amaretto. Cook over medium heat for 5-7 minutes until syrupy. Cool completely.
- In a large bowl, whip very cold heavy cream until soft peaks form. In another bowl, whisk together mascarpone, powdered sugar, and vanilla. Fold whipped cream into mascarpone.
- In a shallow dish, mix cooled brewed espresso and Amaretto. Ensure it’s well combined for the ladyfingers.
- Dip ladyfinger biscuits in the espresso mixture and arrange half in a serving dish. Layer with half of the mascarpone cream and cherry mixture. Repeat the process.
- Cover the assembled tiramisu with plastic wrap and chill in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and garnish with fresh cherries and dark chocolate if desired. Serve chilled.

Notes
Chill your ingredients and layer ladyfingers quickly to maintain texture. For best results, let the assembled tiramisu sit overnight to enhance flavors.
