Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C). Gather ingredients and equipment.
  2. Slice the shallots finely and sauté in 2 tablespoons of olive oil for 7-8 minutes until soft.
  3. Layer the butternut squash and apple slices in the baking dish over the sautéed shallots, tucking in fennel slices.
  4. In a mixing bowl, whisk together remaining olive oil, orange juice and zest, agave syrup, rosemary, and cinnamon. Brush over the layers.
  5. Cover the baking dish with foil and roast for 35 minutes.
  6. Finely chop pecans and mix with remaining orange zest and rosemary, set aside.
  7. After 35 minutes, uncover and sprinkle the pecan mixture over the top. Roast uncovered for an additional 5-10 minutes.
  8. Allow the dish to rest for 15 minutes before serving.
