For the Marinade
  • 1 cup Thai Sweet Chili Sauce
  • 2 tablespoons Soy Sauce Coconut aminos can be used for a gluten-free option
  • 1 tablespoon Fresh Ginger (finely grated)
For the Salmon
  • 2 fillets Salmon Fillets You can substitute with Arctic Char if preferred
For Garnish
  • 2 tablespoons Scallions (green parts only)

Method
 

Cooking Instructions
  1. Preheat the broiler to high, adjusting the oven rack to 5-6 inches from the broiler element.
  2. In a shallow dish, whisk together Thai sweet chili sauce, soy sauce, and freshly grated ginger. Reserve 1/4 cup of marinade for later use.
  3. Add the salmon fillets skin side up into the marinade. Cover and refrigerate for 1 hour.
  4. Line a baking sheet with aluminum foil and spray with nonstick cooking spray. Place the marinated salmon fillets skin side down.
  5. Drizzle the salmon with reserved marinade and broil for about 6-10 minutes, until browned and nearly opaque in the center.
  6. Transfer the salmon to a serving platter, pour reserved sauce over, and garnish with scallions. Serve immediately.

Notes
