Step-by-Step Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the fresh salmon fillets dry using paper towels. Place skin-side down on the prepared baking sheet, drizzle with olive oil, sprinkle with salt, and black pepper.
- In a medium saucepan, combine diced peaches, bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, lemon juice, and smoked paprika. Simmer on medium heat for about 5–7 minutes until it thickens slightly.
- Generously spoon the glaze over the salmon fillets, reserving some for later.
- Transfer the baking sheet into the preheated oven and roast the salmon for 12–15 minutes until it flakes easily with a fork.
- Drizzle the remaining glaze over the fillets for added flavor and garnish with fresh parsley and lemon wedges.

Notes
Pat salmon fillets dry before seasoning for better glaze adherence. Watch closely while broiling to avoid burning. Fresh peaches are best, but if using frozen, ensure they are drained properly.
