Ingredients

For the Jam
  • 5 cups Fresh Peaches Ripe peaches are best for flavor.
  • 4 cups Granulated Sugar Can reduce by a third for less sweetness.
  • 1/4 cup Lemon Juice Freshly squeezed is ideal.
  • 1/2 cup Bourbon Whiskey Substitute with apple juice for a non-alcoholic version.
  • 1 teaspoon Vanilla Extract Pure vanilla is preferable.
  • 1 packet Fruit Pectin Optional for a firmer consistency.

Equipment

  • Heavy-bottomed pot
  • Sterilized jars
  • ice bath

Method

Step-by-Step Instructions
  1. Start by preparing your fresh peaches for the Bourbon Peach Jam. Bring a pot of water to a boil and gently add the peaches, allowing them to blanch for 30 seconds. Immediately transfer them to a bowl of ice water to cool. Once cooled, their skins should slip off effortlessly. Chop the peeled peaches into small pieces, ensuring they're ready for cooking.
  2. In a large, heavy-bottomed pot, combine the chopped peaches, granulated sugar, and freshly squeezed lemon juice. Stir this mixture over medium heat, watching for the sugar to dissolve completely, usually within 5-7 minutes. As you stir, the peaches will start to release their juices, creating a fragrant base for your Bourbon Peach Jam.
  3. Once bubbling begins, it's time to enhance the jam with flavor. Stir in the bourbon and vanilla extract, blending them well into the peach mixture. Continue cooking on medium heat for an additional 15-25 minutes, keeping an eye on the consistency. You’ll know it’s ready when the jam thickens and gleams with a luscious sheen, often resembling a warm fruit compote.
  4. Carefully pour the hot bourbon peach jam into sterilized jars, filling them while leaving about ¼ inch of headspace at the top. Wipe the rims of the jars with a clean cloth to remove any residue before sealing with lids. If canning, process the jars in a boiling water bath for 10 minutes to ensure they seal properly.
  5. After processing, place the jars on a clean kitchen towel or cooling rack to cool completely. Once cooled, ensure each jar is sealed by pressing down in the center of the lid. Properly canned Bourbon Peach Jam can be stored in a cool, dark place for up to a year.
