Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a standard muffin tin.
- Combine old-fashioned rolled oats, baking powder, and salt in a large mixing bowl.
- Add mashed bananas, honey, almond milk, and vanilla extract to the bowl and mix until smooth.
- Gently fold in the blueberries into the oatmeal mixture.
- Spoon the mixture into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 25-30 minutes until the tops are lightly golden and a toothpick comes out clean.
- Let the cups cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
