  • 1 cup Pineapple Juice Preferably fresh
  • 2 tablespoons Honey Can substitute with maple syrup
  • 2 tablespoons Soy Sauce Use tamari for gluten-free
For Garnish (Optional)
  • 1/4 cup Fresh Cilantro Chopped

Step-by-Step Instructions
  1. Marinate Chicken: Combine jerk seasoning, olive oil, salt, and pepper in a large bowl, stirring until mixed. Coat chicken thighs thoroughly in this marinade and refrigerate for at least 1 hour.
  2. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure even cooking.
  3. Prepare Pineapple Sauce: In a saucepan over medium heat, combine diced fresh pineapple, pineapple juice, honey, soy sauce, ginger, garlic, and lime juice. Stir continuously and bring to a gentle simmer for about 10-15 minutes.
  4. Bake Chicken: Place marinated chicken thighs in a baking dish, pour half of the pineapple sauce over them, and bake for 25 minutes.
  5. Cover and Bake: After 25 minutes, cover the baking dish with aluminum foil and bake for an additional 25 minutes.
  6. Uncover and Glaze: Remove foil, brush remaining pineapple sauce over chicken, and bake uncovered for an extra 15-20 minutes until the chicken skin is golden brown and internal temperature reaches 165°F.
  7. Rest and Serve: Remove from oven, let rest for 5 minutes, then serve drizzled with remaining sauce and garnish with fresh cilantro.
