- In a mixing bowl, whisk together the marinade ingredients. Add the chicken thighs, ensuring they are coated. Cover and refrigerate for at least 30 minutes or overnight.
- Preheat the grill to medium-high heat, around 375°F to 400°F. Clean and lightly oil the grates.
- Remove the chicken from the marinade, discarding the leftover marinade. Grill the chicken for 6-8 minutes per side until charred and at an internal temperature of 165°F (75°C).
- Optionally grill the pineapple slices for 2-3 minutes per side until caramelized.
- Serve the chicken, garnished with chopped green onions and grilled pineapple.
