Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, cinnamon, and salt until combined.
  2. In a separate bowl, whisk together the wet ingredients: yogurt, milk, egg, sugar, and vegetable oil until smooth.
  3. Grate the apple and fold it into the wet mixture gently until evenly dispersed.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined; don’t overmix.
  5. Preheat a non-stick skillet over medium heat for about 5 minutes, lightly coat with oil or butter.
  6. Pour about ¼ cup of batter onto the skillet for each pancake, watch for bubbles forming on the surface.
  7. Carefully flip each pancake once the edges are set, cooking until golden brown on both sides.
  8. Transfer cooked pancakes to a plate and cover with a kitchen towel to keep warm while finishing the batch.
